What to make for Cinco de Mayo (easy + actually good)

If you’re planning anything for Cinco de Mayo, this is the one thing I’d make first.

It’s simple, it goes with everything, and people always go back for seconds:


🍚 10-Minute Mexican Rice

It’s the easiest place to start. Fast, flavorful, and it works with tacos, enchiladas, or honestly just on its own.


🌽 Mexican Street Corn Dip

Creamy, cheesy, and always the first thing gone.


🌮 Mexican Enchilada Casserole

Hearty, cheesy, and perfect if you want something more filling.


If you want to round it out even more, I also make a simple pot of pinto beans on the side.
